Here comes a yeast dough! If I can't make a cake, does not mean that I can't play with yeast, flour and salt ;) Call it bread, pizza (yes, we eat a lot of pizza, it is not mythology ;) In this case were wheels of pasta with cheese and sun-dried tomatoes and wheels ... with nutella (I had guests for dinner!)
But I digress ... I wanted to explain the reason for that cross over pasta, but I've already written a lot in my scary english...
Childhood memories: my mother with the women of the family who prepare the pasta and the cutting with a cross before letting it leaven.
I think she did this because it proves more clearly the leavening. Years later, studying the traditions and folklore of my island (and Spain), I discovered that it was another of those gestures related to superstition and religion. The leavening is something magical and then something invisible and bigger had to help it.
Superstitions apart, I think the most fascinating thing is the absolute confidence that if you have always done so, we must continue to do so.
And so I keep doing so and my dough leavens serenely. Good morning!
